South Aegean Special Edition is crafted by blending olive oils from three distinct single-estate farms; two featuring Memecik olives and one with Ayvalik olives. In each estate, olives are early-harvested, hand-picked, and cold-pressed within hours to preserve their exceptional polyphenol content and health benefits.
Once pressed, the olive oils are stored in stainless steel tanks with a nitrogen layer to minimize oxidation. Utilizing advanced technology, the three oils are blended through connected piping into a separate tank, ensuring minimal exposure to air during the process.
This thoughtful and precise method maintains the integrity and health benefits of the varieties, resulting in our signature South Aegean Special - a harmonious special with uncompromising quality and flavor.

HAVAALANI I EDITION

The Havaalani I EVOO is made from the Ayvalik olive. This variety of olive gives the oil a smooth flavor with a light peppery kick.
The process behind creating this EVOO is very meticulous. The olives are hand-picked in late September, and within a few hours, they are cold-pressed and sealed in stainless steel casks under a nitrogen layer to minimize oxidation. This process is important for producing olive oil that retains the highest level of healthy substances such as polyphenols, monounsaturated fats, and the anti-inflammatory properties of oleic acid.
Using this delicious EVOO fresh from the bottle in a salad dressing, dipping sauce, or finishing oil is the best way to experience its full health benefits. It's still perfect for pan sauces, marinades, and grilling.

EXPLORE OLEAVIA'S POMEGRANATE PASTE
Oleavia Pomegranate Paste
No Added Sugar
The process of making our pomegranate paste is meticulous. First carefully selected pomegranates are granulated. From this, the paste is extracted and the pulps and the seeds are separated. The pure paste then gets boiled at a low temperature of 149°F under a vacuum. This technique helps us maintain the health benefits of the pomegranate paste at its highest level.
